What is picanha?
Picanha is a cut of steak that comes from the end of a steer, just above the tail. In the United States, this cut is sometimes called a top sirloin or a rump cut. Picanha is characterized by a thick cap of fat that covers the top of the steak. This adds complexity and flavor to the finished product.
