A blue cheese with a spicy kick, the blue itself is mild and mellow, but not boring. The peperoncini rossi pepper adds just the right amount of heat as to not overpower the cheese, making this is one of the better blues to throw on a burger – basically, it offers the ultimate creaminess at melting point.
Carr Valley is one of the oldest, largest producers of cheese in the states, but they do it at the highest quality level considering the amount of cheese being produced. They come up with these “American Originals” that use a old world cheese making traditions and add a new world piece to it. Wildfire Blue is one of the best of this series (which is saying a lot considering how good the others have been). We recommend that you try it with a low IBU pale ale, like MadTree Brewing’s PSA, or a nice glass of Viognier.
