Cranberry Vinaigrette

Ingredients (yields 1 cup)
- ½ cup cranberries
- 3 tablespoons sugar
- 6 tablespoons cider vinegar
- 1 teaspoon Dijon mustard
- 3 tablespoons orange juice
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- ½ cup vegetable oil
Directions
- Combine the cranberries, sugar and vinegar in a small saucepan and simmer for 4-5 minutes, until the berries pop.
- Cool and puree in a food processor. Add mustard, orange juice, salt and pepper to processor and pulse to combine.
- With processor running, drizzle in the oil until emulsified.
