Baked Burro Bananas

Tips
- Burro bananas are ripe when the skin turns yellow and develops dark spots.
- These can be eaten by themselves or added to fruit salads. They can be dried into chips, baked, boiled or when ripe are used for desserts.
- Burro bananas are also called Orinoco, horse, and chunky bananas.
Ingredients (serves 2)
- 2 ripe burro bananas
- 2 tablespoons butter, cut into small cubes
- ¼ cup brown sugar
- ¼ teaspoon cinnamon
- ¼ teaspoon ground cardamom or allspice
- Preheat oven to 400°F.
- Peel bananas and cut into chunks.
- Place into a shallow baking dish. Sprinkle with brown sugar, cinnamon, and cardamom, then dot evenly with butter.
- Bake for 20 minutes or until bubbles form. Serve warm.
