Betel leaves are primarily consumed as a remedy for various ailments including headaches and skin irritations.
Used in Middle Eastern countries for centuries as a medicinal herb. Has high amounts of vitamins and minerals and is rich in essential amino acids.
Ingredients (serves 4)
2 teaspoon tamarind concentrate mixed with 5 teaspoons water
1 tablespoon palm sugar
½ tablespoon fresh lime juice
1 tablespoon soy sauce
1 fresh thai peppers, sliced
2 tablespoons roasted peanuts, crushed
2 cups fresh betel leaves, thinly sliced
1 cup shredded carrots
¼ cup fresh mint leaves, sliced
Directions
In a small mixing bowl, add tamarind juice, palm sugar, lime, and soy sauce. Mix together. You can use the lime and sugar to adjust the taste to be as sweet or sour as you prefer, but be careful not to add too much lime juice. Letting the tamarind juice take the lead in this the sauce yields delicious results.
Put the betel leaves and carrots in a medium mixing bowl. Pour the tamarind mixture over the leaves and carrots, then follow with peanut, chili, mint leaves. Mix well and then serve.
