Water chestnuts have a crunchy, apple-like texture with a mildly sweet taste.
To use, wash thoroughly. Cut off the top and bottom ends to expose the white flesh. Cut in a spiral around edges to remove the brown skin. Leave whole or slice. Immerse in cold water with a small amount of lemon juice to prevent discoloration.
Eat raw or cook. Can be mixed into a stir fry.
Ingredients (serves 3)
10 ounces of cooked chicken
1 cup of grapes, cut in half
½ cup of walnuts
½ cup fresh water chestnuts, peeled and diced
½ cup of mayonnaise
1 pinch of salt and pepper
Directions
Chop chicken into slightly larger than ½-inch chunks.
Put the chicken into a medium size mixing bowl.
Add grapes, water chestnuts and walnuts and about ½ cup of mayonnaise.
Gently mix everything together. Season with salt and pepper to taste.
