Ingredients (Makes 3 cups)
3 ripe mangos, peeled and diced
1 red bell pepper, diced
½ cup diced fresh pineapple
¼ cup chopped red onion
1 small jalapeño pepper, seeded and minced
2 tablespoons fresh lime juice
2 tablespoons chopped cilantro
Salt and black pepper, to taste
Directions
Combine ingredients in a bowl and chill at least one hour. Serve over grilled fish, chicken or pork or with tortilla chips.
