Thai Coconut Peanut Sauce

Ingredients (yields 2 cups)
- 1 cup coconut milk, well shaken
- ½ cup peanut butter
- ¼ cup Major Grey Chutney, chopped
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons rice wine vinegar
- 1 tablespoon ginger paste
- 2 teaspoons sesame oil
- 1 clove garlic, finely minced
- ¼ teaspoon red pepper flakes
Directions
- Combine all ingredients in a small saucepan and whisk to combine.
- Simmer sauce over medium heat for 2-3 minutes, whisking occasionally.
- Serve warm over grilled chicken, fish or pork.
