Thai Coconut Peanut Sauce

Ingredients (yields 2 cups)
1 cup coconut milk, well shaken
½ cup peanut butter
¼ cup Major Grey Chutney, chopped
3 tablespoons soy sauce
2 tablespoons brown sugar
2 tablespoons rice wine vinegar
1 tablespoon ginger paste
2 teaspoons sesame oil
1 clove garlic, finely minced
¼ teaspoon red pepper flakes
Directions
Combine all ingredients in a small saucepan and whisk to combine.
Simmer sauce over medium heat for 2-3 minutes, whisking occasionally.
Serve warm over grilled chicken, fish or pork.
